Here is a wonderful salad that will taste great and make you feel great all in one. This is the perfect “detox” food that has natural ingredients that are cleansing to the body. This is definitely one you will want to keep in your recipe books. the Dressing is delicious and tastes great on all types of salads too! The Perfect CPM Challenge Treat!

Ingredients

For the dressing:

1/3 cup avocado oil

1/2 cup lemon juice, fresh

1 tablespoon fresh ginger, peeled and grated

1 teaspoon of Dijon mustard

1-2 cloves of garlic

For the salad:

2 cups of raw kale (steamed)

2 cups sliced red cabbage

2 cups steamed broccoli florets

1 cup of grated carrots

1/2 cup of sliced red pepper

2 avocados diced

1 teaspoon of cilantro

1 cup raw cashews

i cup of raw diced asparagus

1 cup of diced hard boiled eggs

Directions

Whisk together all ingredients for the dressing (or put everything in a small blender and blend) and set aside until ready to use.
Throw kale in a small Tupperware and microwave on high for 1 minute. Then make sure to steam the broccoli
Add the kale, cabbage, steamed broccoli, red pepper, asparagus, and carrots to a large serving bowl.
Pour desired amount of dressing over the salad and toss until everything is coated.
Add the parsley, diced avocado, eggs, and cashews, and toss again.Then Top with cilantro.
