The timing of this post is perfect because my refrigerator still smells new and surprisingly still clean following the summer months.

The kitchen is the public face of the home. Yet the act of opening the fridge is a very intimating one that reveals some of our most private pleasures, desires and aspirations. I like to call mine my medicine cabinet!

Stocking my refrigerator with ready-to-eat produce that I have prepped ahead of time gets my family to eat more fruits and veggies. It’s easy to grab some baby carrots and snap peas for a quick snack and can save you time during the week when it comes to preparing meals.

On Sunday we also cook up some protein. I like to have 3 options to use throughout the week.

Here is my meal prep plan for this week:
• Strawberries and blueberries
• Raw carrots and bell pepper sticks
• Salad greens – spring mix, spinach and arugula
• Roasted sweet potatoes
• Roasted bell peppers, mushrooms and onions
• 1-pound of hamburger
• 2-pounds of instant pot chicken
• 2-pounds of sirloin steak
• ½ dozen hard boiled eggs

My favorite containers are those that are clear so that you can easily see what’s inside. I look for containers that are BFA-free, stain and odor resistant, and microwave, freezer and dishwasher safe.

Other staples items include:
• Kerrygold butter – I use on everything – veggies, in my coffee, baked goods, on a spoon
• Nut Butters
• Almond Milk
• Coconut coffee creamer
• Cheese sticks and Babybel
• Dilusso Lunch meat

Those who know me well know that I am pretty anal retentive when it comes to organization so when I saw the idea of using a Lazy Susan in the fridge it was an absolute must. Most would think it’s a waste of space (including my husband) but I love the easy access and the clean lines.
