Fit Chic Pumpkin Bars… Post WLC Delisciousness
This is the perfect Fall treat that will make the whole family swoon. These are great for parties, Thanksgiving dinners, or maybe for a special treat. They are just as easy to make as they are to taste. You can also freeze them for up to a month and have as a grab and go to soothe that sweet tooth craving!
2 cups almond flour or Gluten Free Flour
½ teaspoon salt
1 teaspoon baking powder
2 teaspoons pumpkin pie spice
3 teaspoons of cinnamon
¼ cup almond butter
2 tablespoons coconut oil
¼ cup coconut palm sugar
2 tablespoons maple syrup
2 teaspoons vanilla extract
2 tablespoons coconut creamer (I used vanilla)
1 cup pumpkin puree
1/2 cup grass-fed butter or coconut oil melted
1/3 cup agave maple syrup
1/4 teaspoon cinnamon
3 tablespoons coconut flour or almond flour
2 1/2 tablespoons coconut creamer or full fat half and half
1 tablespoon coconut palm sugar
Preheat the oven to 350 degrees F. Grease and line an 8×8 baking dish.
Combine the flour,baking powder, cinnamon, and pumpkin pie spice in a small bowl and mix well. Set aside.
In a medium mixing bowl, add the melted coconut oil, almond butter,coconut sugar, maple syrup, vanilla and creamer t and stir until well-combined.
Next, Add the pumpkin puree and stir well.
Add the dry ingredients to the wet ingredients and stir well until all ingredients are combined.
Pour mixture into the 8×8 pan and place in the oven for 30-35 minutes, or until you can stick a toothpick in the middle.
Allow to cool in pan for 15 minutes then place the bars in the pan in the refrigerator for at least 30 minutes.
While the bars are cooling, prepare the frosting.
In a medium bowl, beat the grass-fed butter until smooth and cream.
Next, Add the maple syrup, cinnamon, coconut flour, coconut creamer, and coconut sugar and beat will until combined, about 2 minutes. If you’re using ghee add an additional tablespoon of coconut flour. When bars are completely cool, remove them from the pan and cover them with the frosting.
Chill in the refrigerator again for 15 minutes.
