Fit Chic Pumpkin Pancakes ….

It is pumpkin season and what better way to celebrate than with some pancakes! Here is the recipe that is easy, fun, and delicious! It is the perfect compliment to the season.

Ingredients:

1 cup of unsweetened vanilla almond milk

1/2 cup of coconut vanilla creamer

1 cup pumpkin puree

1 egg

2 tablespoons coconut oil

1/2 scoop of chocolate whey protein powder

1 1/2 cups almond flour

1/2 cup coconut flour

3 tablespoons brown sugar

2 teaspoons baking powder

1 teaspoon ground cinnamon

1 teaspoon of pumpkin spice

1 teaspoon of vanilla

unsweetened shredded coconut

candied pecans (optional)

2-3 tablespoons of grass-fed butter

Directions:

In a bowl, mix together the milk,creamer, pumpkin, egg, and oil. Combine the flours, palm sugar, baking powder, protein powder, pumpkin spice, cinnamon, and vanilla and mix with a mixer on low to medium until ingredients are mixed throughout.
Heat a lightly buttered griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
Top with unsweetened coconut and pecans.
Add Grade B Maple Syrup on top
