It’s Time To Post This

If you workout with me at 6:30 am or attend my 6:30 class at the mall, you know that I eat the same breakfast after class every day. I am a creature of habit! People ask about it often because it (kind of) looks disgusting. Looks are deceiving though because it is DELICIOUS! My husband and I call it the 2016 Recipe of the Year at the Plucker house.  I got this recipe from Bobbi, a CPM member. And I tell members (just like she told me) that you just have to try it. Yes, it sounds weird but it’s delicious!

So here it is:

Peach, Egg & Pecan Breakfast

1 tbsp Coconut Oil
1 Peach (or Mango) – cut into bite size pieces
Handful of Pecans
3 Eggs
2 tbsp Applesauce
Cinnamon

*this is for an Emily – size serving 😉

Fry the peaches and pecans in coconut oil for a couple minutes. I’ve been using frozen peaches and mangos this winter… fry them a little longer. Add the eggs, applesauce and cinnamon. Fry until the eggs are cooked. The less you flip the eggs, the better it will look. But we don’t really care about looks as long as it tastes good. And that’s it!

This recipe is AWESOME reheated so you can make it the night before if you are short on time. Try it and let me know what you think. You will not regret it. I go to bed looking forward to having this in the morning… that’s no lie!!
