It’s National Spinach Day

In honor of national spinach day KDLT teamed up with CPM FITness’s Fit Chic La to do a segment on some great spinach recipes that make you feel great and taste even better!

Truth be told that “mother does know best” especially when it comes to making you eat your greens. Spinach may give an extra boost to your heart along with many other wonderful benefits. It is high in carotenoids, which act as antioxidants and free your body of potentially harmful compounds. They’re also high in vitamin K, Iron, Folate, and Calcium. Spinach also has some omega-3 fatty acids which like salmon reduce the risk of heart disease and aids in proper digestion.

Here are two recipes that I included on the KDLT morning show ….

Spinach Smoothie:
Ingredients:

8 oz of unsweetened almond or coconut milk

1/2 frozen banana or (4-5 frozen banana pieces)

1 tablespoon of nut butter (almond, peanut, sun butter)

1 cup of spinach leaves (fresh)

1 scoop of vanilla or chocolate whey protein

1/2 cup of crushed ice

Directions:
Place all ingredients in a blender and mix on medium to high power for about 1 to 2 minutes.

Strawberry Spinach Salad

Ingredients
1 package of baby spinach
1 cup of diced strawberries
1 cup of diced asparagus
1/2 cup of raw pecans

Directions in a large bowl combine all the ingredients and add dressing to your liking.

Dressing:
1/2 cup of olive oil
1 tablespoon of raw honey
1/4 cup of balsamic vinegar
dash of ground pepper
3/4 tablespoon of dijon mustard

In a small glass or salad dressing maker … combine all ingredients and stir until completely mixed. You can store this for later use as well!
