I have had a lot of clients come to me this past week and say they are “Tired of Olive Oil and Vinegar” on their salads. So with every problem comes a fabulous solution. Here are 3 dressings that I love,  and go great on vegetables, salads, and meat marinades …

Cherry Balsamic Dressing

Ingredients:

3 cups cherries halved and pitted

2 cloves of garlic

1 cup balsamic

1/4 cup of applesauce

Pinch of salt and pepper

1 t. dry mustard

3 cups olive oil

Directions: Put cherries, garlic and balsamic in a blender, blend until cherries are very fine. Add rest of ingredients and blend. Store in the refrigerator.

Garlic Dijon Dressing

Ingredients

1/4 cup balsamic vinegar

1 tablespoon chopped garlic

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

3/4 cup olive oil

1 tablespoon of Dijon mustard

Mixed Greens salad mix or favorite lettuce selection.

Assortment of salad ingredients, such as cherry tomatoes, chopped carrots, sliced red onion, chopped celery, diced cucumbers, walnuts

Directions

Mix the vinegar, garlic, and salt until salt is completely dissolved.

Then add the olive oil, Dijon mustard, and pepper until smooth throughout.

Avocado Dressing:

Ingredients:

2 avocados, pitted

1/2 yellow onion

3 tablespoons of lemon juice

1 clove of garlic (minced)

1/4 cup of salsa

Directions:

Place avocado, onion, lime, salsa, and salts in food processor. Process until smooth, creamy dressing forms.

Now you can have even more variety to your already delicious nutritious foods that you are eating!
